Tilapia with Guac Tomato Salad

I cook just about every night but I forget to tell you that. I'm actually Julia freakin Child if you want to know the truth. I was reminded tonight that she is no longer with us so maybe my reference was not a positive one but let's consider me the zombie version and move right along!

I like to cook healthy meals for my family. The kinds that are full of protein and vitamins. Yes, that's important to me. But equally important is using up the items I have in my freezer and frig before they go bad. I often Google things l find in my frig to see what I can find. Tonight's search was Tilapia with avocado and tomato. I wasn't entirely pleased with any of the results, but I got some great ideas and I got to concocting. 

Here's what I came up with and apparently, it was pretty darned good because it was gobbled up at the speed of light. Seriously, these people have no table manners. 

Marinade:
4 tablespoons extra virgin olive oil
1/2 teaspoon pepper
1/2 teaspoon garlic powder (please do not use garlic salt unless you want a heart attack)
1/2 teaspoon basil
1/2 teaspoon thyme
1 tablespoon lime juice

Mix that all together and split in half. 

Spread 6 Tilapia fillets in a baking pan and coat with half of the above mixture. Set aside. This really only takes about 10 minutes to bake on 350 so wait until everything else is ready before tossing in the oven.

Guac and tomato salad:
1 tomato deseeded and diced
1 Avocado diced
1 sprig of Cilantro...pluck the leaves and chop
Mix the above in the other half of the marinade and throw in the frig.

The side of veggies add to the health factor and add delicious vitamins to the dish. I used sugar snap peas, small red potatoes, roasted red peppers (from a jar) and steamed them in the same marinade I used on the meat and in the guac salad. Consistency in a meal is key!

Seriously the whole meal took less than an hour to cook (I precooked the potatoes in the oven for an hour so I probably cheated), but other than that, it was easy peasy and apparently quite delicious!
